Daily Bread

No Knead Bread made with half wholemeal spelt flour and half plain white flour is so very, very good and much more successful than trying it with ordinary wholewheat flour. I think this really will become my every day bread recipe. Of course I don’t eat enough bread to make it every single day, but it’s perfect to make a couple of times a week and delightfully simple.

I’ve also been working on perfecting a recipe of my own. I often bake with whatever is to hand without bothering to measure things. This usually works, the only problem is that it normally works best first time and results in things that I can’t re-create. This was one of those things, I made it on holiday and my mum and aunt insisted I start writing recipes down so that they could re-create them. So I’ve been trying to re-create this and I think, after a bit of trial and error, I know what will work, but haven’t had a chance to try it out yet. As soon as I’m happy with it I’ll share it here, because it really was wonderful – indulgent, rich and healthy. For now here’s a peek at the ingredients alongwith a promise that I’ll start attempting to give more helpful replies to the ‘how did you make this?’ query than ‘threw stuff in bowl and mixed it together!’

mmmm, I love home made bread. When I was a stay-at-home-most-of-the-time-mommy, I baked a lot of bread. I mix whole wheat and white flour as well with a teeny tiny touch of honey.

Hmmm, I can’t think what you are going to make that uses avacado and chocolate! – I’m intrigued.

I think that as soon as I pick up a pan/pot to bake bread in, I’m going to try that recipe. We have some great bakeries in the area, but nothing makes an apartment smell like a loaf of freshed baked bread…and in an apartment with 5 20 somethings, you know it needs to be freshened.

I think the no knead bread recipe is pure genius. I have only ever made it with all purpose flour though…so far. I will have to try whole wheat/whole meal next.

I know that you obviously have read some Neil Gaiman [Coraline!]. I just picked up volume one of Sandman last night, have you read those?

No Knead? What’s the point?!
:)
Kneading is my favorite part of the whole break-making process, it just feels to good to me to get my hands into some dough and feel it becoming smooth.

Ooh I have some spelt flour in the cupboard that I might give that bread a shot with.

The pile of ingredients look very intriguing, looking forward to the recipe for those :o)

All of this reminds me of a story I one time came across (did not actually check it out – still I suppose it is authentic, and anyhow – it’s only a device to demonstrate a point…): This particular Spanish spice driver, who was also a a Cabala specialist, and had been around in 75 A.D was in fact particularly attracted to the sun and its particular affect over our lives (in the astrological sense). This driver formed several pretty complicated formulas (sans pc applications), and finally released a public statement: the earth revolves around the sun. Thing is – the driver got a couple of major elements in the calculations drastically wrong (did I say absolutely no pc applications?). The 2 slips probably negated one another – and he arrived at a correct bottom line at the end…What I am saying is that I do believe it doesn’t really matter precisely how one comes to a result, providing that it is actually right. Despite the fact that I may disagree with some of what you say, It looks like you’re making a good point. Cheers for the post:)
