Cake!

Chocolate avocado almond pear upsides down cake, if you say that fast enough it really is delicious!

This would be the recipe I teased you with the ingredients for a few days ago.

I know they look a little odd together but it really is good and of course much healthier than most indulgent desserts. My presentation skills are somewhat lacking but for a fancier dinner party version I think it might be pretty made in individual ramekins.

Ingredients

1 medium avocado (about 4 – 5 oz of flesh).

4oz / 115g sugar, I used a mixture of light brown muscavado and unrefined caster.

5oz / 140g ground almonds.

3 eggs.

100g (3.5oz) bar of good dark chocolate (at least 70% cocoa solids).

2 pears.
Directions

Pre-heat oven to 180 degrees c / 350 degrees f. Melt chocolate in heat proof bowl over a pan of simmering water. While chocolate is melting prepare other ingredients but keep an eye on it and remove from heat when melted. Scoop out the avocado flesh into a large bowl and either mash with a fork or puree with a blender until smooth.

Separate the eggs, putting the whites in another large bowl and adding yolks to the avocado. Beat the yolks, sugar and almond into the avocado.

Whisk the eggs whites until the ’soft peak’ stage – like this:

With a metal spoon gently fold a spoonful of the egg white into the melted chocolate. Fold in the rest of the egg white and then fold this mixture into the avocado one.

Slice pears and arrange in the bottom of a dish (mine is about 6×12 inches) and pour over the cake mixture. Bake for about 30 minutes until mixture is no longer liquid.

I’m sure this would be good without the pears, but I haven’t tried it. Next on my list of things to experiment with is chocolate avocado cupcakes.

I am going to try it…but I think that I will not tell the occupants in my house what is in it until after they try it! Sneaky huh?

Yum! There is so much baking going on in blog land at the moment! I hate cooking but I can do cakes if pushed. I love the little black cardi. I have just finished Gretel, what a great pattern. I will post a piccie when it dries from blocking. x

Mmmm… I love avocados, chocolate and adore pears, so this one is definitely going on my “must try in the dead of winter when I need comfort food” list. :) Thank you for sharing (and your photos are lovely! :)

As a mexican I can’t really imagine avocado in a dessert but the idea sounds really intriguing, I’ll give it a try and let you now.

This sounds so good!
I picked up a nice ripe avocado and some organic, fair-trade chocolate on my way to pick my daughter up from school, and I’m going to give this a try tomorrow.
If you happen to develop any recipes using winter squash or pumpkin, please share them…we have lots of squash, and neither of my kids are particularly keen on it!

I made this cake over the weekend…my teenage daughter wrinkled her nose when she saw the ingredients but she loved it. The only thing I did different was to toast the almonds before I ground them, and I only used 3 oz of sugar but my chocolate was only 65% so I figured it could do with a bit less sugar. It was very yummy… thanks so much for sharing this.

BTW – I think you are the cleverist of knitters I’ve seen in blogland!

made this last night. it was absolutely delicious. and i love the fact that it’s flour-free: my gluten-intolerant aunt can finally have chocolate cake again.

i’m considering trying it again, and substituting home-made applesauce and sliced apples for the avacado and pears. for variety’s sake.

Pig wot flies made this to have at her birthday party last night and I got to try some. It was delicious! Who would ever have thought it was made from those ingredients though?! I think I will have to try making it myself sometime soon :-)

I made this and loved it! I didn’t use any pears(not my favorite fruit), but thought that the cake could use some kind of topping, so I blended some leftover avocado with almonds, lots of lemon rind, juice and sugar. Delicious!
My friends were very sceptical because of the avocado frosting, they called it “guacamole-cake”. ;)
