I love beetroot. I have a 'subscription' on a veggies and fruit bag. It's an initiative from biological etc. growers. The vegs and fruits are in season. When the weather is real bad and wet the contents of the bag is sometimes real sad, but last weeks we had all kind of wonderful things. And yes, lots of beetroot, f.e. Wonderful recipe, Ysolda! Christina - having once lived in Edinburgh myself, I'm afraid I can tell you that it's pretty much the second most expensive place to live in the UK. That said, rent is still considerably cheaper than in London - you're probably looking at about £270 - £300/month for a room in a nice shared flat; less if you're prepared to live further out. If you're after a one bedroom flat then you're talking at least £500 for anywhere remotely central. No idea about nursing opportunities, I'm afraid, but good luck!
