Chocolate cake with beetroot. We used a recipe from a fairtrade booklet, but it’s the same as this. I subbed cocoa powder + sugar for the drinking chocolate and used a mixture of white flour, wholemeal spelt flour and ground almonds instead of just flour. The recipe we used was for a 7″ cake tin but once I saw how much mixture we had I made the decision to use a bigger spring release tin – I’m so glad I did, it would have volcanoed out of the 7″ one.
Potato bread – no recipe but vaguely along the lines of the famous no knead bread and baked in a cast iron casserole. This makes fantastic toast.
