More veggies in baking

Chocolate cake with beetroot. We used a recipe from a fairtrade booklet, but it’s the same as this. I subbed cocoa powder + sugar for the drinking chocolate and used a mixture of white flour, wholemeal spelt flour and ground almonds instead of just flour. The recipe we used was for a 7″ cake tin but once I saw how much mixture we had I made the decision to use a bigger spring release tin – I’m so glad I did, it would have volcanoed out of the 7″ one.

Potato bread – no recipe but vaguely along the lines of the famous no knead bread and baked in a cast iron casserole. This makes fantastic toast.

And was it good? I’ve heard of chocolate and zucchini and chocolate and pumpkin, but never chocolate and beetroot. I can imagine it is good though!

I just made a courgette cake for my Grandpa’s 90th Birthday cake, but stupidly forgot to take a picture to share. The recipe is from Nigella’s How to be a Domestic Goddess, and its good!

Eek! The thought of vegetables in cake scares me a bit. They do look hella tasty, though.

That potato bread looks good. I would like to try some. Could you give me a start on the ingredients? I would like to try and experiment and see what I would come up with. Thanks
