date and walnut muffins

I made these this evening, very yummy (and healthy if you care about such things).
Makes 12
Dry stuff:
3oz wholemeal plain flour,
5 1/2 ounces plain flour,
1oz wheargerm (which is a very good source of folic acid apparently - but if you don’t have any just substitute with wholemeal flour),
2oz soft brown sugar,
2tsp bicarbonate soda,
1/2 tsp ginger,
1/2 tsp cinnamon,
3ox chopped dates,
2oz chopped walnuts.
Mix together in a bowl and make a well in the centre, like so:

Wet, goopy stuff:
8oz natural yoghurt,
4tbsp sunflower oil,
2tbsp mollases,
1 egg.
Whisk together in a little bowl:

Then pour the goopy mixture into the well in the dry stuff. Mix until just combined. Spoon into muffin cases:

Bake at gas mark 6 for uhh… until they’re done. I didn’t time it but maybe about 20 mins - you can test by sticking a fork into one - if it comes out clean they’re done.
