Chocolate Avocado Cake(s)
So, so good. These are disappearing fast.
Beat together, I used a hand held blender but a wooden spoon and some effort will work too:
1 very ripe medium avocado
3 eggs
1 tbsp runny honey
4oz light muscavado sugar
Then fold into the beaten mixture:
4oz plain flour, I used half wholemeal and half white
2oz ground almonds
2oz cocoa powder
2tsp baking powder

Bake at 180c until a skewer inserted into the center comes out clean. I happened to have some leftover coffee icing in the freezer so I used that on some of them. They’re also wonderful with greek yogurt.

i LOVE avocado, one of my favorite things to eat… never had it in anything sweet though, this recipe intrigues me!
